You can "see" a black hole by the light given off by surrounding stars.

That's the point, if you look at something and there are no photons reflected for that thing, it appears black. It doesn't matter if it really is black, or if there is "nothing", it is black because color is just perception of light wavelengths that come from that direction. If there are no photons, it is black, it doesn't matter what is cause of this lack of photons

If there are no particles for light to bounce off anyways, surely it would be transparent?

there might be particles to bounce off, but there might be none that bounce off if they get absorbed
