Map size, start type and troop distribution affect a lot too... here is what i mainly use.
(dragons are off the list because i don't have them.)

Top 3 hc
1.tannenbaums
2.retiles/arachnids
3. Frankensteins

Top 3 att
1.reptiles/arachnids
2. terminators
3. pumpkins

I really dont play 1v1Q because:
1. its not hosted as much
2. i suck at it.

Top 3 1v1q
1.pumpkins
2.reptiles/arachnids
3.undead

Here is the official answer and the reason(s) why:

TOP 3 HC

1- Tannenbaums
2- Undead
3- Frankensteins / Werewolves

Reason: First Hit win = HC Win - If you win the "front row hit" you win - therefore Trees and Undead rule here. If that fails - on a small map Franks are next to impossible to defeat and Werewolves win = this is only on a small map though

TOP 3 ATT

1- Dragons
2- Reptiles
3- Arachnids

Reason: 5% edge PLUS spawn bonus = this gives the best advantage here

TOP 3 1 ON 1 QUICK

1- Pumpkins
2- Dragons/Reptiles/Arachnids/Insectoids
3- Cyborgs

Reason - Disagree with me if you like, but learn how this mode works first. In this mode EVERYTHING is disabled except spawn bonuses - all of your other race based bonuses are worth ZERO. With that in mind, pumpkins are 15% spawn bonus, the second tier is 10% bonus and cyborgs are additional 5 storage.

You may disagree with me on anything else - I am right about 1v1q

EDIT: Also NEVER play 1v1q - Lopdo needs to delete this option....

I agree with BeatlesFan, but as a sidenote if you're just starting out go for the upgrades it will give you an advantage in almost every game.

HC:
1. Tannenbaums
2. Werewolves/Frankensteins
3. Dragons

In HC one roll often makes a huge difference towards the outcome, so bigger boosts give you that winning edge.

ATT:
1. Natives
2. Pumpkins
3. Dragons

I would argue that natives take a big advantage in ATT, not only because they slow the enemy down but because everyone's reluctant to attack you in the first place. The less they take after a breakthrough, the better.

1v1q:
1. Pumpkins
2. [Anything with a 10% boost]
3. Undead

Spawn is pretty much all that matters, I'd argue that Undead are next best for insurance. But if you're playing 1v1q, you may as well just use whichever race looks best to you and feel fancy.

I have to lean toward this as well, if you play 1v1q might as well flip a coin and look as cool as you like while doing it ;)

And just to add, HC/ATT aren't the only settings that should influence your race... for example:

-Spawn bonuses are more effective on large maps, and meaningless on really small ones.
-Lots of people use the Undead to conserve boosts and protect against the occasional surprise bad luck.
-Frankensteins and (to a lesser extent) werewolves are particularly good on full map games for obvious reasons.
-Teddies are great if you want to prove yourself
-Santas are great if you want to get shards faster

Personally, I use werewolves a lot. They're pretty good for most game settings, but more to the point it was the race I had wanted from the beginning. They just look good (even more so in between their first release and the shards release because almost no one had them), and everyone knows the most important part of VW is looking good.

Spoiler: show
But seriously, don't forget to play with the Dark Knights and Reindeer (and Blade Masters, Snowmen, Pirates, Cyrborgs, etc.) from time to time. If we neglect them for too long, they'll become vengeful and haunt your computer.
